Les Terrines, a bistro in the hands of a master

After heading up les Trois Marches at the Trianon Palace in Versailles for thirty years, Gérard Vié has  set up shop less than five minutes on foot from the Hotel Aviatic in the rue du Cherche Midi, probably attracted by the reputation of our hotel and – more seriously – by the beauty and calm of the neighbourhood.



Like many great chefs who have spent years giving everything to haute cuisine and then decided to go back to basics without the constant pressure of Michelin stars, Gérard Vié has chosen to open a bistro, one of those lively places where it’s possible to serve food that’s both simple and high quality. The team running the show is obviously a group of friends for whom setting up a restaurant is above all else a wonderful adventure to share.



The minute you walk through the door you can tell how much they enjoyed setting the place up.vi_.jpg An enormous jambon de coche (leg of pork), rare in Paris, from la Maison Laborie (a renowned French charcuterie from the Auvergne region) takes pride of place and diffuses its perfume around the room, already full of regulars and future regulars such as ourselves, the Aviatic receptionists, who have come to pay a neighbourly visit.
Our hosts are in the prime of life. You can guess their profession from their bon vivant attitude. A friendly and attentive energy demonstrates their desire to please. We are thirsty. The sommelier opens us a bottle as he’s so good he knows exactly what we want even without asking. He’ll come back to see us again when we are ordering our meal and, with confidence and good humour, help us to choose. The chalkboard is only a tiny part of a menu which is still being developed.
Of course, as a starter we order terrines - rabbit terrine with offal and haricot bean and pig’s trotter terrine, both absolutely top notch in our opinion. It’s good, honest food, perfectly prepared and subtly traditional (in that the “country cooking” style isn’t overdone as it is in so many bistros).
As a main course, go straight for the scallops with aniseed-flavoured lentils. If you’re more of a meat person, go for the slow-cooked Limousin veal with endives and orange. It melts in the mouth and is so good it brings tears to your eyes.
For dessert, if you have fond memories of your grandmother’s poached pears, don’t worry, it’s the same sweet song remixed with blackcurrant and violet ice cream. It’s just perfect.
We linger at the table a while longer to make the most of the joyful atmosphere in the room, buzzing with that lively yet unobtrusive style of conversation that Parisians have mastered so well.
And lastly the prices are reasonable too (starters from 9 to 12 euros and mains from 18 to 22 euros. The set menu is 34 euros and the lunch set menu is 24 euros).
Recommendation of the month…book in advance to avoid disappointment.

It’s Christmas at the Hotel Aviatic

noel December. It’s cold, it rains almost every day, and the sky is a mass of depressing clouds. At home we hardly dare turn on the heating for fear of going into the red! You need a lot of imagination to find a ray of sunshine amid the winter gloom. Well, either imagination or patience as luckily Christmas will soon be here to cheer us up. “So what?”, you may ask. Will the weather be nicer at Christmas? It’s unlikely. On the contrary, the biting cold will probably be even more ferocious. And, who knows, with a bit of bad luck, it will have snowed and then turned to slush, leaving the pavements a dirty mush. So why should we see Christmas as an enchanted wonderland?



NOEL1 For the simple reason that, as Calvin Coolidge, the 30th president of the United States used to say, « Christmas is not a day or a season but a state of mind ». The sky might be grey and miserable, the weather might be merciless, yet the Christmas star still shines brightly in the middle of the gloom, warming our hearts and raising our spirits. Outside it’s cold, yet we are warm and cosy. The battle against the winter won, we can reward ourselves with gifts and decorations. With this in mind, the Hotel Aviatic is also getting into the festive spirit. Take heart! Enjoy the colours of Christmas! Red for passion, silver for plenty and a good dose of imagination to finish.

And as well as being a feast for the eyes, Christmas at the Hotel Aviatic is also a feast for the palate. At the Christmas breakfast an array of macaroons, petits fours and other treats will complete the traditional buffet. And because Christmas without presents is like a tree without tinsel, clients will receive an assortment of chocolates from master chocolatier Philippe Pascoet, one of the hotel’s neighbours.

Ambiance Noël à l'Aviatic



noel Décembre. Il fait froid, il pleut presque tous les jours, le ciel est un amas de nuages dépressifs. Chez soi on n'ose à peine allumer le chauffage de peur de se ruiner. Bref, dans ce contexte morose il faut beaucoup d'imagination pour trouver un peu de soleil. De l'imagination ou de la patience car tel Zorro venu nous sauver, Noël, dieu merci, va bientôt arriver. Et alors ? Fera-t-il pour autant plus beau à Noël ? C'est peu probable. Au contraire , la morsure du froid sera certainement encore plus féroce. Qui sait ? Avec un peu de malchance il aura même neigé, et les flocons à la poussière mélangés viendront souiller nos trottoirs d'une mélasse noirâtre et baveuse. Pourquoi alors voir en Noël une parenthèse enchantée ?



NOEL1 Pour la simple et bonne raison que, comme aimait à l'affirmer Calvin Coolidge, le 30ème président des Etats-Unis, "Noël n'est pas un jour ni une saison mais un état d'esprit". Le temps a beau être gris, le climat a beau être impitoyable, l'étoile de Noël scintille au milieu d'un ciel opaque. Sa lueur nous illumine au plus profond de nos cœurs. Dehors il fait froid et pourtant nous avons chaud. La grisaille désormais vaincue, on se pare de guirlandes et on se couvre de cadeaux tels des soldats que l'on récompense à coup de médailles et de permissions. Dans cet esprit, l'Hôtel Aviatic aussi se met au diapason. Hauts les cœurs ! En fête les couleurs ! Du rouge pour la passion, de l'argent pour l'abondance et une bonne dose d'imagination pour harmoniser le tout.

Au plaisir des yeux s'ajoute celui du palet. Lors du petit déjeuner de Noël toute une gamme de macarons, petits fours et autres gourmandises viendra compléter le traditionnel buffet. Enfin parce qu'un Noël sans cadeaux c'est comme un sapin sans guirlandes, les clients se verront offrir comme cadeau de fin d'année un assortiment de chocolats de la boutique voisine du maître chocolatier Philippe Pascoet.

Un bon restaurant japonais à Montparnasse

 Vous nous demandez régulièrement quand vous arrivez à l’hôtel Aviatic où manger japonais et à notre grand regret nous devons d’abord vous expliquer où ne pas manger !
L’art du sushi réclame en effet un savoir-faire qui s’acquiert extrêmement lentement.

Les japonais ont coutume de dire qu'il faut 10 ans de pratique avant d'acquérir le titre de sushiya (maître sushi)

Autant éviter s’il se peut ces endroits qui sentent la brochette et où l’on vous sert des sushis sortis du frigo ! Les connaisseurs savent que les meilleurs et authentiques restaurants japonais de Paris ont élu domicile rue sainte Anne près de la place de l’Opéra. Quand vous arrivez à l’Hôtel Aviatic vous n’avez pas forcément envie de traverser Paris pour dîner et vous avez bien raison car à deux pas de chez nous vous avez l’un des meilleurs de la capitale.

 Une preuve ? Les japonais s’y pressent. Bienvenue au Toritcho !


Vous y dégusterez tempura (beignets de légumes), sashimi (lamelles de poisson crus) et nigiri-sushi (sushi pressés) confectionnés devant vous par deux sushiya qui sauront vous expliquer les rudiments de leur art. C’est délicieux, le service est précis et agréable, et les prix sont raisonnables.

 Guests arriving at the Aviatic Hotel regularly ask where they can eat good Japanese food.  Unfortunately, the first thing we have to tell them is where not to eat! 

The art of sushi certainly takes time to learn.
The Japanese say that it takes ten years to become a sushiya (master sushi chef). 

It’s best to avoid those places that smell like kebabs and where you are served sushi straight from the fridge.  Connoisseurs know that the best and most authentic Japanese restaurants in Paris have set up home in rue Sainte Anne, near Place de l’Opéra.  Of course when you arrive at the Aviatic Hotel you don’t necessarily want to travel across Paris for dinner, and why would you seeing as you have one of the capital’s best Japanese restaurants just around the corner from the hotel?

The proof?  The Japanese flock there.  Welcome to Le Toritcho!
Dishes include tempura (deep-fried battered vegetables), sashimi (thinly sliced raw fish) and nigiri-sushi (hand-formed sushi), prepared in front of you by two master sushi chefs who are happy to demonstrate the basics of their art.  It’s delicious, the service is efficient and friendly, and the prices are reasonable.

Everyone is a gastronome at the restaurant “Aux Charpentiers”!

charpentiers Gastronomy, often considered elitist, is generally defined, rather vaguely, as a particularly attentive way of cooking and eating.
Far from this rather narrow-minded notion, the “Aux Charpentiers” restaurant offers a totally different approach. In this 1930s-style bistrot, it would seem, to quote sociologist Theodore Zelding, that gastronomy is the art of using food to create happiness.

Tous gastronomes "Aux Charpentiers" !

On définit généralement et vaguement la gastronomie comme une manière particulièrement attentive, souvent considérée comme élitiste, de cuisiner et, surtout de déguster des aliments.
Loin de cette conception sectaire, le restaurant "Aux Charpentiers" propose une approche toute différente. Dans ce grand bistrot style 1930, il semblerait, pour reprendre le sociologue Theodore Zeldin, que la gastronomie soit l'art d'utiliser la nourriture pour créer le bonheur.

Un bonheur accessible au plus grand nombre comme en témoigne le menu spécial à 28€. Aux Charpentiers on compte en effet parmi les clients aussi bien les étudiants que les éditeurs du quartier, les hommes politiques ou tout simplement les amateurs de tête de veau et de viandes du Limousin labellisées. L'ambiance est, comme la cuisine, haute en couleurs et en saveurs.
